As we see on television’s ‘what’s in your wallet?’, I ask you this:  what’s in your pantry?  Pantry supplies can make a dull meal of chicken breast and asparagus into an exotic meal full of explosive and complex flavors.  A pinch of this and a few drops of that can transform an ordinary meal into something special.  Here are a few of my favorite ‘go to’ items in my own pantry:

SPICES:  sea salt, Mrs. Dash, cinnamon, red pepper flakes, hot sauce, Middle Eastern and Indian rubs (available at any international grocer), raisins, cloves, nutmeg, pepper corns, juniper berries, bay leaves, Provencal herbal mixtures, balsamic vinegar, extra virgin olive oil for cooking, a really flavorful olive oil to dribble on any dish, curry, coconut milk, vanilla beans, packaged chestnuts, rolled oats, red and black rice, angel hair pasta, canned tomatoes, low sodium stock, and orange blossom water.

I prefer fresh herbs over dried and I have my own Aero garden on my kitchen counter which supplies me year-round with fresh cut herbs that make any meal sing.  My herbal collection includes: lemon basil, Italian basil, dill, flat parsley, chives, rosemary, thyme, dill, sage and tarragon.  If you purchase fresh herbs, store them in Mrs. Green’s bags (available online or at Whole Foods) for longer life.
